THAT'S WHY WE DON'T LIMIT OURSELVES TO ONE DECORTICATION STEP.
The phases of the alma® method
Alma® Method, from the Latin “Anima”, reaches the soul of the grain of wheat, its purest part.
I. First Cleaning
At this stage, the wheat passes through the different machines that separate the grain from impurities of all kinds in 3 mechanical steps.
Cleaning involves breaking the outermost layer of the grain, in order to reach its heart.
II. OPTICAL READER
A high-precision optical reader detects and eliminates any non-compliant micro-impurities and foreign materials by colour, shape and texture.
III. SOAKING
We soak the wheat and let it rest for at least 10 hours to rebalance all nutrients, promote the final stage of methode and facilitate grinding.
iV. Double Decortication with Diamond-coated Stone
This is the heart of our method.
It eliminates residual impurities by reaching the soul of the wheat grain which gives our pasta a bright colour and intense flavour.

Wheat selection and analysis
Our pasta factory has a Research and Development department busy analysing and selecting the world’s best wheats (including Sardinian durum wheat) to meet the envisaged quality parameters.
Fresh vintage wheat
We only mill wheat harvested in the year of production.
This guarantees the freshness of the raw material.
